Very common in Spain and throughout the Mediterranean basin for centuries, the gargoulette or botijo is the ancestor of the water-bottle. This unglazed ceramic object was used to keep water cool, even in direct sunlight! In fact, its porous structure allows evaporation to refresh the water inside.
